Flight Mode is a popular award-winning medium roast coffee blend, crafted from two origins: Kenya and Papua New Guinea (PNG).

This blend delivers vibrant berry acidity, balanced by grounding flavours of sweet biscuit and rich toffee, and finishes with a distinct silky texture in the cup.

Originally released as a seasonal favourite, Flight Mode proved so popular it became a permanent offering. Its balanced structure makes it highly versatile, producing expressive espresso as well as a clean, structured pour-over.

Designed for those who appreciate fruit-forward specialty coffee with clarity, sweetness, and smooth body.

Silky, Creamy, and Balanced

Coffee is best stored in a cool and dark place, away from heat and sunlight. Ideally in an air-tight container such as an Air Scape canister.

Acidity
Acidity refers to the pleasant brightness, liveliness, or tartness felt on the sides and tip of the tongue. It's not sourness, but freshness!

Body is the weight, texture, or viscosity of the coffee felt in your mouth. A high body feels thick and creamy; a low body is light and delicate.

Sweetness
Sweetness refers to the presence of natural sugars remaining in the coffee after roasting. It balances the acidity and often presents as caramel or honey notes.

Roast
Roast Level indicates how long the bean was roasted. Lighter roasts retain more of the bean's original, acidic, fruity notes; darker roasts develop more chocolate and bitterness.

The Pilot's Choice: Flight Mode Story

Established in 2015, the Flight Mode Blend is a tribute to our customer, Richard, a commercial pilot who regularly visited our café. Richard was a discerning customer, dedicated to brewing excellence on his challenging La Pavoni lever machine. After many deep conversations, our roaster, Erik, crafted this precise, unique blend with Richard’s direct input, naming it Flight Mode in his honour. It quickly became too popular to remain seasonal, and although it has won fewer awards than our House or Organic blends, it has consistently achieved higher rankings due to its specific and delicate flavour complexity.

Sourcing & Components

Two-Part Precision: Kenya & PNG

The sophisticated profile of this blend is a result of sourcing only two high-altitude origins, both selected for their distinctive and specific characteristics. Their synergy creates a harmonious and complex cup:

  • Kenya: Provides the signature dark berry undertones (blackberry/blueberry), along with the depth of body and vibrant, high-note acidity that characterises the blend's brightness.
  • Papua New Guinea (PNG): Contributes essential sweetness, smoothness, and the luxurious silkiness that gives the blend its creamy, clean finish.

Roasting Philosophy

Clarity, Balance, and Versatility

This blend is handled as a meticulous Medium Roast, developed to maintain exceptional clarity in the final cup. While optimised for espresso (perfect for demanding machines like the La Pavoni), its characteristics translate beautifully to filter brewing. When prepared as a pour-over, the blend maintains a clarity that allows the specific notes to shine through without confusion. The ultimate goal of this roast is a perfectly balanced "work of art" between sweetness, acidity, and bitterness.
