Our unique Queensland Grown Specialty Coffee is sourced locally from Mareeba, Far North Queensland. It presents a clean, mellow, and medium-lightly body profile with soft nutty and milk chocolate flavours. Enjoyed black, it reveals vibrant fruity notes and subtle citrus. With milk, it transforms into rich caramel and milk chocolate. This blend of washed and natural processes is a must-try for local coffee enthusiasts.

Clean, Smooth, and Delicate

Coffee is best stored in a cool and dark place, away from heat and sunlight. Ideally in an air-tight container such as an Air Scape canister.

Acidity
Acidity refers to the pleasant brightness, liveliness, or tartness felt on the sides and tip of the tongue. It's not sourness, but freshness!

Body is the weight, texture, or viscosity of the coffee felt in your mouth. A high body feels thick and creamy; a low body is light and delicate.

Sweetness
Sweetness refers to the presence of natural sugars remaining in the coffee after roasting. It balances the acidity and often presents as caramel or honey notes.

Roast
Roast Level indicates how long the bean was roasted. Lighter roasts retain more of the bean's original, acidic, fruity notes; darker roasts develop more chocolate and bitterness.

The Future of Local Coffee: Queensland Story

Created in 2024, this blend (which is actually a Single Origin blending two different processes) marks a milestone for Sipping Duck. We have always wanted to feature local coffee, but previous attempts didn't meet our specialty standards—or our customers' expectations. Now, we are incredibly proud to work closely with an old grower in Mareeba who has redefined their techniques. This collaboration resulted in a coffee that not only meets but exceeds specialty-grade standards. The name is simple, but powerful: it celebrates the high quality of coffee grown right here in Far North Queensland.

Sourcing & Components

Grown in Mareeba: Low Carbon Footprint

Sourcing this coffee allows us to make powerful claims: it is locally grown, Australian, reaches specialty standards, and uses no pesticides, resulting in an exceptionally low carbon footprint. This blend uses beans from the same farm, processed in two distinct ways:

  • Natural Process: This component adds a lovely light body and intense fruity characteristics, giving the black coffee its vibrant life.
  • Washed Process: This component acts as the clean base, ensuring the mellow, clean canvas and medium acidity are maintained.

This fusion of methods creates a dynamic, balanced profile that captures the best of both styles.

Roasting Philosophy & Brewing Tips

The Finesse Roast: Medium Roast Mastery

This is a delicate Medium Roast calibrated to preserve the nuanced citrus and fruity notes. It is a trickier coffee to brew than our dense blends, but mastering it is incredibly rewarding.

Espresso & Stovetop: This coffee must be brewed using a generous dose and requires careful attention to grind. Do not grind too coarse. If the extraction is too quick, the coffee will lack body and take on an unpleasant, underdeveloped taste. Play with your grinder settings—a slightly finer grind than usual is often needed.

Filter (Pour-Over): While filter methods are known for a tea-like feel, this coffee excels here. Enjoy it black to let the delicate citrusy notes and clarity shine through.

Plunger (French Press): To enhance the light body, you can grind it slightly finer than usual for this method.
