This is pure backyard honey. The taste changes throughout the year, depending on which plants where flowering at the time. Sometimes it might be ticker, sometimes it might be lighter in colour and consistency or have strong vanilla notes. It's a bit of a lucky dip, but well worth the risk, as every batch is unique and absolutely delicious!

This honey is so pure that it may crystallise. If that happens to your honey, there is nothing wrong with it; by simply warming up the bottom of the jar slightly, the honey will return to its liquid state. Some people prefer crystallised honey because it doesn't run off the toast, and others because it's amazing for cooking or even added to face masks!
